Singapore startup Mottainai Food Tech has a unique approach to tackling food waste by transforming soy leftovers into plant-based meat, inspired by the Japanese concept of “mottainai,” meaning “what a waste.” The company’s co-founders, including Dr. Chua Jian Yong, are driven by a mission to create sustainable products from raw materials sourced from a local soy product company.
The startup’s flagship product, Jiro Meat, is crafted from okara, a by-product of soy milk and tofu production. Despite initial skepticism about the market potential for plant-based meat, Mottainai’s success in winning the 2022 DBS Foundation X NEA Hungry for Change Challenge boosted confidence in the viability of their innovative approach.
With funding support and strategic investments, Mottainai established a pilot facility to commercialize Jiro Meat, led by co-founder Carol Zheng. The team’s dedication to upcycling okara through solid-state fermentation led to the creation of a nutritious, protein-rich, and flavorful plant-based meat alternative.
By utilizing fermentation technology, Mottainai minimizes waste in the production process, a key principle aligned with their mottainai philosophy.
