When it comes to vegan chicken nuggets, the quest for that perfect blend of taste and texture is a challenging one. With the rise of plant-based alternatives in the market, the competition is fierce, each brand striving to recreate the nostalgic experience of indulging in a classic chicken nugget. The landscape of faux-chicken nuggets is evolving rapidly, with a projected market worth of $140 billion in the near future. Companies are experimenting with various ingredients like soy isolates, pea protein, jackfruit, and mycoprotein to mimic the unique texture of ground chicken.
In a blind taste test conducted by Bon Appétit, nine staff members sampled nuggets from seven different brands, including Whole Foods, Impossible Meat, and Quorn, to determine the standout contender. Prepared according to package instructions and served with ketchup, the tasting revealed a mix of hits and misses, with some nuggets faring better than others.
One brand that stood out was Nowadays, known for its juiciness and healthier vegan chicken recipe. Despite its glutinous seitan taste, the nugget was described as “actively bad” by some tasters due to its excessively spongy texture. In contrast, Whole Foods’ Frozen Chicken-Style Plant-Based Nuggets boasted a meaty flavor, although some found it to be greasy and unpleasantly dense.
Jack & Annie’s Crispy Jack Nuggets introduced a unique twist by using jackfruit as the main meat substitute. However, the grayish tint and unappealing texture left testers unimpressed, likening it to “raw flour” and “papier-mâché.” Quorn’s Meatless Nuggets, made from mycoprotein, received mixed reviews, with some finding them passable while others deemed them the worst of the bunch.
Daring Breaded Plant Chicken Pieces offered a decent flavor profile with a high ratio of crust, earning praise for its texture despite being slightly dry. Simulate Nuggs, with its fast-food replica vibe, impressed with a well-seasoned crust but fell short in terms of flavor accuracy. The crowd favorite emerged as the Impossible Nugget, lauded for its golden crust, meaty flavor, and nostalgic appeal, setting a high bar that other brands struggled to match.
As the plant-based food industry continues to expand, the quest for the perfect vegan chicken nugget remains a top priority for brands looking to cater to a growing consumer demand for sustainable and cruelty-free options. With innovation driving the development of new ingredients and recipes, the future of vegan nuggets promises exciting possibilities for both seasoned vegetarians and curious meat-eaters alike.
